1, 2, 3: it’s all green!
Home sweet home! I’ll be in The Netherlands the next few weeks, something I’ve been really looking forward to during my last trips. Being at home means a lot to me, not in the least because I can cook my own food again. When you spend a lot of your time abroad, nothing beats coming home and preparing your own meals (at least, that’s what I think ;-)) This week it’s all green for me: green soup, juice and wraps! By the way, did you guys see the promo video yet of my Vogue photo shoot? I have to admit, I was quite nervous at the start. Instead of running down the track on my spikes, I had to pose like a proper model in designer outfits haha. Quite the contrast! But I must say: I’m really proud of the result! The magazine will be in stores on June 21st.

GREEN soup
Ingredients (basic)
- 500 gr broccoli
- 1 stump of celery
- 1 clove of garlic
- 1 l vegetable stock
You can pimp the soup with, for instance, ricotta, smoked salmon or fresh mint!
Chop up the celery, fry the parts together with the garlic in a tablespoon of hot olive oil. Add the broccoli and a liter of stock. Let it boil for ten minutes. Finally, mash the soup with a (hand)mixer.
GREEN juice
Ingredients
- 2 hands of fresh spinach
- 200 ml (coconut) water
- 1 apple (or banana)
- 1 teaspoon of Teff*
*Teff is a type of wheat (small grain) and very nutritious. It contains a lot of iron and minerals.
Put all the ingredients in a blender and mash it to a smooth juice.
GREEN wraps
Ingredients
- 2 multigrain wraps
- 200 gr biological chicken fillets
- 1 avocado
- 50 gr alfalfa
- 100 gr dandelion salad
- 1 tablespoon soy sauce
- 1 teaspoon sambal
Cut the chicken in strips. Fry them in a pan with the soy sauce and sambal. Mash the avocado (or cut it in small slices) Fill the wrap with all the ingredients, it doesn’t get any easier..
